Sweet Potato Lentil Soup

Ingredients

  • 1 large sweet potato ( 2 if using small)
  • 1 cup dry lentils (red is best)
  • 4 cups water
  • 4 cups organic vegetable/chicken broth
  • 2 large handfuls of organic spinach (fresh or frozen)
  • 1.5 teaspoons salt (redmonds/himalayan)
  • 1 teaspoon organic curry powder
  • ½ teaspoon organic smoked paprika
  • 1 small onion (½ large onion)
  • 1 tablespoon olive oil

***NOTE: Soak grains for a few hours to promote better digestion***

Procedure

  1. Dice onion and sweet potato into small quarter size pieces (AKA prep veggies).
  2. Turn on InstantPot, press saute, add oil. Once oil is heated, add onions and saute until translucent/golden brown.
  3. Press cancel on Instant Pot and add liquids (water + broth). 
  4. Add sweet potatoes, soaked lentils to pot.
  5. Add all seasonings: salt, curry powder, smoked paprika and stir well.
  6. Add handfuls of spinach and stir.
  7. Close lid and set to soup function for 25 minutes and let pressure release naturally.
