Ingredients

  • 1 cup frozen berries
  • Juice of 1 Lemon
  • ⅓ cup coconut milk
  • 2 flax eggs
  • 2 tbsp honey
  • 1.5 cup oat flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1-2 tbsp coconut butter (optional)
  • ⅓ cup coconut oil

~ Optional 1 Ingredient Dairy-Free Icing ~

If coconut butter is solidified, you can melt some in a pot on the stovetop via a double-boiler or microwave 1-2 tbsp for 30-40 seconds.

Procedure

  1. Preheat oven to 350 F and line loaf pan with parchment paper
  2. Combine flaxseed meal and water and let sit for 15 minutes.
  3. Add oat flour, baking powder,salt and coconut milk in a large bowl.
  4. Combine wet ingredients (flax eggs, honey, and lemon juice)in a small bowl.
  5. Transfer dry ingredients into wet ingredients and mix well. Carefully fold in frozen berries.
  6. Transfer to bread loaf tin and topped with extra frozen berries if desired. Bake for 38-40 minutes. Allow loaf to cool before slicing and adding icing.
  7. Store in refrigerator for a week or freezer as desired.
