Ingredients
- 1 cup frozen berries
- Juice of 1 Lemon
- ⅓ cup coconut milk
- 2 flax eggs
- 2 tbsp honey
- 1.5 cup oat flour
- 1 tsp baking powder
- 1 pinch of salt
- 1-2 tbsp coconut butter (optional)
- ⅓ cup coconut oil

If coconut butter is solidified, you can melt some in a pot on the stovetop via a double-boiler or microwave 1-2 tbsp for 30-40 seconds.
Procedure
- Preheat oven to 350 F and line loaf pan with parchment paper
- Combine flaxseed meal and water and let sit for 15 minutes.
- Add oat flour, baking powder,salt and coconut milk in a large bowl.
- Combine wet ingredients (flax eggs, honey, and lemon juice)in a small bowl.
- Transfer dry ingredients into wet ingredients and mix well. Carefully fold in frozen berries.
- Transfer to bread loaf tin and topped with extra frozen berries if desired. Bake for 38-40 minutes. Allow loaf to cool before slicing and adding icing.
- Store in refrigerator for a week or freezer as desired.
