Ingredients

  • 2 cups gluten-free organic rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon gluten-free baking powder
  • 2 tablespoons ground flaxseed meal
  • ¾ cup sunflower butter
  • ⅓ cup raw honey
  • ½ cup unsweetened shredded coconut
  • 1.5 teaspoons vanilla extract
  • ¼ cup organic raisins
  • ½ cup organic sunflower seeds
  • ¼ cup organic pumpkin seeds

Procedure

1. Preheat oven to 350 F.

2. Prepare flax eggs. Combine 2 tablespoons ground flaxseed meal with 5 tablespoons of water. Stir gently and allow to sit at room temperature for 15 minutes.

3. While flax eggs are setting, combine all dry ingredients (salt, oats, coconut, baking soda, baking powder) in a large bowl. Mix well.

4. After 15 minutes have passed, add wet ingredients (sunflower butter, honey, vanilla) to the flax egg mixture.

5. Add wet ingredients to dry ingredients and stir until oats are fully coated.

6. Add toppings to the mixture (seeds, raisins) . Divide cookies into 3 tablespoon size portions.

** If mixture is too sticky, refrigerate for 1o minutes prior to baking. **

7. Bake for 18-20 minutes or until golden brown.
